The Roots: Family & Tradition
When our family first moved to Canada in the 2000s, we noticed something strange: Chinese food were ubiquitous, yet authentic Chinese cooking were few and far between. Restaurants and supermarket shelves were dominated by “sweet & sour everything” or watered-down recipes, while the deeper regional flavors that define real Chinese cuisine were largely missing.
In 2020, our family set out to change that by launching the Flavor of China brand from the beautiful small town of Salmon Arm, BC—creating the first line of all-in-one Chinese cooking sauces in North America that are true to tradition, clean-labeled, and easy to use.
The philosophy is simple: proper flavor, made easy—turning complex dishes into practical sauces so anyone can cook at home, without advanced skills, special equipment, or long lists of unfamiliar ingredients.
This work became the unshakeable foundation of everything we do today.
The Discovery: A New Possibility
After establishing Flavor of China, we began broadening our product line following the same philosophy: proper flavor, made easy.
One such idea was a squeez bottle chili oil crisp. After countless testings, we hit a wall—the chili flakes always clung to the bottom and impossible to pour.
Then one day, feeling defeat and frustrated, Will, our co-founder, beat some leftover chili oil into a batch of mayonnaise.
One taste, and we all knew we had stumbled onto something special!
That moment made us reevaluate the North American pantry through a new lens. Staples like mayonnaise, dressings, and ketchup are fine—but they often lack depth and variety. Even their "innovative" versions tend to recycle common flavors like pickle, bacon, chipotle, or siracha.
It made us wonder: what if the classic Chinese flavors that have stood the test of time could bring something new to these everyday staples?
The Next Chapter: A Bridge of Flavor
That idea became the Will’s brand.
If Flavor of China represents our roots in traditional authentic Chinese cooking, Will’s is the branch that bridges those same wonderful flavors to everyday foods people already know and love.
The goal is simple: take bold, time-tested flavors and apply them to familiar formats so more people can enjoy them!
Our Chili Oil Mayo, for example, isn’t a novelty twist—it is the natural evolution of a classic: spicy, creamy, deeply savory, and endlessly versatile.
Together, these two brands reflect the hearts of our family—one grounded in tradition and authenticity, the other sharing those flavors in new and approachable ways.
